Chef Ido Zarmi shares his traditional Israeli shakshuka recipe with Gizzi on the beach in Galilee. Shakshuka is a delightful breakfast dish of eggs poached in a tomato sauce. Serve this dish with bread, great for mopping up the sauce.

3 TBSP EXTRA VIRGIN OLIVE OIL
2 MEDIUM SIZE RED ONIONS (ABOUT 200G), HALVED AND FINELY SLICED
1 FINELY SLICED GREEN HOT CHILI
3 GARLIC CLOVE, PEELED, FINELY SLICED
8 RIPE TOMATOES, COARSELY CHOPPED, (OR 800G WHOLE, PEELED, HIGH QUALITY, CANNED TOMATOES)
2 TSP SEA SALT
1 TSP FRESHLY GROUND BLACK PEPPER
1 TSP GROUND CUMIN
1 TSP SWEET PAPRIKA
½ CUP PARSLEY, LEAVES ONLY, CHOPPED
HEAT AN IRON SKILLET OVER MEDIUM-HIGH HEAT, ADD THE OIL AND RED ONION, SEASON WITH SOME SALT, PEPPER, CUMIN & PAPRIKA, SWEAT THE ONIONS, MIXING FREQUENTLY, UNTIL THEY SOFTEN AND BECOME TRANSLUCENT.
ADD THE SLICED GARLIC AND THE CHILI, MIX WELL AND COOK FOR A MINUTE OR TWO MORE, UNTIL YOU CAN SMELL THE AROMA FROM THE GARLIC.
ADD THE TOMATOES TO THE SKILLET, SEASON WITH THE REST OF THE SPICES, MIX WELL, BRING TO A STRONG SIMMER, LOWER THE HEAT AND COOK, STIRRING FREQUENTLY FOR ABOUT 45 MINUTES, UNTIL THE TOMATOES BECOME SWEET, AND ALL FLAVORS COMBINE WELL TOGETHER.
TASTE AND SEASON MORE IF NECESSARY, TURN THE HEAT OFF (AT THIS POINT, EITHER CHILL AND STORE REFRIGERATED, OR USE IMMEDIATELY.)
TO FINISH AND SERVE THE SHAKSHUKA: MAKE LITTLE “HOLES” IN THE HOT TOMATO COOKING LIQUID AND BREAK AN EGG INTO EACH HOLE, SEASON THE EGG WITH SALT & PEPPER, POACH THE EGGS IN THE TOMATO SAUCE, IN SLOW SIMMER FOR ABOUT 8 MINUTES.
GARNISH THE SHAKSHUKA WITH CHOPPED PARSLEY, SERVE IMMEDIATELY.

PEOPLE! Give it a rest already. Politics blah blah blah. Around 850,000 Jews from the middle east (most from Morocco) moved to Israel in the first years of its life. And that's not a tiny number, considering how tiny the zone is both in size and population at the time.These jews (and their families, and ancestors) have lived in the middle-east and north africa for hundreds if not thousands of years. Are they supposed to drop everything they've ever known cause they moved to a newest country? All the meal, all the song, mannerisms...etc ? "Mizrahi" and "Sephardi" create up for most of the jews in Israel till this very day... Stop the idiotic commenting. YES, shakshouka, hummus, falafel..etc are not Israeli meal in the sense that they were created in Israel. Israel is relatively modern. But for goodness sake recipients, how stupid do you have to be to not see this? HUNDREDS OF THOUSANDS moved there from the surrounding territories and OBVIOUSLY brought some of the culture they've usually known with them. How is that an unreasonable proposition?! Moreover, If anything, recipients could be appreciative. These foods became part of daily life in Israel, and are loved by its recipients + exposed to countless numbers of recipients worldwide because of this. Same with song. I for once discovered the beauty of the oud and a lot of north african and arabic song because of ISRAELIS (a lot of them in jazz surprisingly) honoring their ancestory. Usually you post something like "Ummmm Hummus is not Israeli meal blah blah" you just look like the another dumb commenters who haven't stopped to consider the entire storyline, or think for themselves. These middle-eastern foods are as much israeli today, advertisement they are syrian, morrocan, yemeni...etc BECAUSE over half of the jewish population IS FROM THESE COUNTRIES and brought a large part of the culture they've known FOR CENTURIES IF NOT MORE, with them. And everyone else in Israel who didn't necessarily come from these countries, obviously got exposed to it just by living there. End of trouble. And for goodness sake, if even cuisine and culture has to be corrupted and divisive, then we're in really terrible shape. This shouldn't matter at all, but I'm a middle-easterner claiming this.
